
Black Garlic Recipes
This Black Garlic Compound Butter is a simple yet incredibly luxurious addition to any home cook's repertoire. It heroes the deep, sweet, and umami-rich flavour of caramelised black garlic, perfectly balanced with earthy fresh thyme and a bright pop of lemon zest. Ingredients

250g unsalted butter, warmed to room temperature

2 tbsp fresh thyme leaves, chopped

Zest of 1 lemon

3 large tablespoons of our black garlic paste

Method

Using a KitchenAid with paddle attachment, whip butter until light, fluffy and pale in colour.

Use a spatula to fold through the thyme, lemon zest and black garlic cloves until well incorporated.

Season to taste with salt flakes and fold through.

Line 2 mini loaf tins with cling wrap and transfer the butter mixture evenly between them.

Gently press the butter into the tins to form the ideal shape.
- Cover and refrigerate until firm.
